This dessert beverage is so delicious (and I swear I'm not biased). I've made it for several friends and their reaction is almost always "WHOA. That is SO GOOD!" The best part is that it’s really easy to make.
Makes: About 30 ounces
What You'll Need:
1.25 cups raw almonds
2.5 cups filtered water + 1 cup
5 pitted dates
1 tsp vanilla extract
1 tsp ground cinnamon
A pinch of sea salt
In a 32-ounce mason jar or airtight container, combine 1.25 cup of raw almonds with 2.5 cup of water and 6 pitted dates. Put on the lid and set it in the refrigerator for 12 hours.
Remove from the refrigerator and pour it into a high speed blender. Add 1 more cup of cold filtered water, 1 teaspoon each vanilla extract and ground cinnamon and a pinch of sea salt. Blend for about 90 seconds (or until it has a smooth consistency).
With clean hands, pour the liquid into a mesh nut milk bag over a large bowl and squeeze the milk out of the bag and into the bowl. You should end up with a puddy-like pulp in the bag. Discard the excess pulp or use it in another recipe.
For a warm beverage (not raw):
Transfer the milk into a saucepan and warm it up! Transfer any leftover almond milk into an airtight container - refrigerate and enjoy over the next few days!
